Over a month ago, my husband and I embarked on our first trip to Europe!!! We were there for a couple weeks and spent our time exploring the capital cities of Norway, Denmark, and Sweden. The two things I found most captivating was the art, especially the architecture, and the food! Our trip started in Oslo, Norway and Copenhagen, Denmark (check out the links at the end of the post for more details) and ended our Euro trip in Stockholm, Sweden:
AB Café
Never in my whole life did I eat pastries and drink coffee every morning until I arrived in Europe! A lot of pastries I had were hearty which left me wanting to have at least one daily. In the neighborhood near where we were staying at was AB Café. This is a small, cozy cafe where you can have a small bite to eat and drink before you start your day. Pictured below is their Key Lime Sandwich, latte, and a bullar (sweet bun). It was a nice fika!

Phil's Burger
There were a lot of hamburger chain restaurants in Scandinavia. American hamburger chain restaurants were abundant, but we skipped them and wanted to check out the ones that were local to the area instead. Our Airbnb host recommended that we try out burgers from Phil's Burger. They bake their own bread every morning, their food does not have additives, 100% Black Angus are used for their hamburgers, and they also offer Vegetarian and Gluten-Free options.

Our meal consisted of Halloumi Burger (left) with dressing, avocado, dried tomatoes, romaine lettuce, wonton and pickled red onion. This burger is for all you Vegetarians! I got the Phil's Burger with the classic cheese, dressing, romaine lettuce, and onions:
The burgers' taste reminded me of In-N-Out and the fries tasted similar to Burger King, it was an interesting pairing, but nonetheless delicious!

Ekstedt
When we were researching of places to eat at prior to arriving to Europe, the one place I had to absolutely eat at was Ekstedt. I liked the segments about this place on MUNCHIES and Eat the World with Emeril Lagasse (E1, S1). Luckily, I was able to make a reservation, it is recommended to do so one month in advanced.
Ekstedt focuses on New Nordic Cuisine, a cuisine that promotes the use of local, natural, and seasonal foods in restaurants and homes. What makes Ekstedt unique is that they only cook their foods over an open fire - no gas stoves or electric griddles are used whatsoever! They have chosen to prepare their foods as a tribute to the ancient, primal way of cooking. Their menu is based on ingredients from the sea, forest, meadows, and fields.
From their menu we ordered the 4 Courses with the Wine Pairing. We were lucky to sit at the front of the Chef's Table and see the foods being prepared right in front of us. Everything we ate was pure and exquisite!
Our 4 Courses Meal consisted of:
-Dried reindeer, leek, vendace roe and charcoal cream
-Juniper baked turbot, potatoes, and bottarga
-Birch fired wild duck, sunchoke and elderflower
-Wood fired oven baked quince, saffron and frozen herbs
We were given extra treats in between such as rye bread with butter, cracker with mooseheart, and donuts for dessert. If you ever dine here and curious as to what their kitchen looks like, feel free to ask to take a peep! Also, the service was outstanding making it wonderful dining experience that we'll never forget!
